2 large oranges, peeled, pith removed, and diced
1 large tomato, diced
1/3 c. minced red onion
1 tsp. grated orange peel
1 tsp. minced garlic
1 tbsp. jalapeno pepper, seeded* and minced
1/8 tsp. salt
1 tbsp. fresh cilantro, finely chopped
(*to turn up the heat, add the jalapeno seeds to the salsa)
mix the ingredients together and leave at room temperature for about 30 minutes.
