recipe for Accras (Cod Fritters)

1 lb Dried Salted Cod (or white fish fillets)
1 cup Flour
1 cup Milk
1 Egg
Chives or spring onions
Peppers, salt and pepper to taste
Frying oil
Soak the salted cod in cold water for 24 hours (change the water 2 or 3 times) then remove the skin and bones (This step unnecessary if using fresh fish fillets). Mix the flour, milk and egg together until smooth then add the flaked cod and season to taste. Heat the oil and add spoonfuls of the mixture.
Cook until golden (around 4-5 minutes) turning occasionally.
Drain and serve.
Accras can equally be made using cooked, peeled prawns instead of the cod.
