1/2 lb. shrimp, cooked, peeled, and coarsely chopped
1 avocado, peeled and chopped
1 medium cucumber, peeled, seeded, and chopped
1/4 c. cilantro, finely chopped
2 tbsp. jalapeno, seeded* and minced
1/4 c. lime juice
1 tsp. lime peel, grated
salt & pepper to taste
(*To turn up the heat, add the jalapeno seeds to the salsa)
mix ingredients together and leave at room temperature for about 30 minutes.
